Gary's Frito Burritos

Do I have a treat for you today! Yep, you guessed it, this one uses Fritos! This recipe is made up by my husband and is his copy cat version of the Taco Bell Frito Burrito! My hubby likes to cook but the only problem with this is he doesn't measure, he just throws things together. I will do my best with photo's to show you how this one is done! If you like taco's then your going to just DIE when you try this one.

Frito Burritos Recipe:
2 lb hamburger
1 onion
1 Tbsp minced garlic
salt (preference)
pepper (preference)
1 Tsp garlic salt
1 small can green chili's
cilantro (we used green onions because we didn't have cilantro)
Tortilla's
 White Rice (your preference on how much) we did 2 C.
1 Tbsp Butter
1 can refried Beans
Cheese (preference)
1 Cup frozen corn
1 Bag Fritos

To begin with this one, you have to get some rice going. We have a rice cooker so we do it in there, this makes for a slower process and gives you more time to get everything else going. You can cook your rice on the stove top but if your going to do that I would do it in reverse order and not cook my rice until after everything else is ready.
Once you have your rice going your going to want to brown your hamburger in a skillet with your 1 Tbsp of butter.

Add your salt, pepper, and garlic salt to the meat while it is browning. Once this gets going add in half your onion, the 1 Tbsp minced garlic and the can of green chili's.

You will then add in your taco seasoning packet and let this simmer until the hamburger is cooked all the way through.

 Next, chop up some cilantro or green onion, and mix this along with the rest of your regular white onion and the frozen corn into your rice. Heat through,


In the mean time you want to heat up your refried beans and shred your cheese so they are ready to go. Yummy!!!

You now have all of your ingredients and are ready to go! Add everything to your tortilla. We topped off with some salsa, sour cream and Frito's! There ya have it folks, YUMMY Frito Burritos!!

AND WHAT IS THE VERDICT FOR THIS ONE YOU ASK?


Great for kids of all ages!! 

 We did do a Teddy friendly version of this because we all know picky eaters aren't going to eat refried beans, salsa or sour cream.

Keebler Pumpkin Mousse Pie


I am excited to share this recipe with all of you this evening! I thought since Thanksgiving is a week away this would be a great one to try!  I found this goody on the back of the Keebler Ready Crust wrapper when I was making a cherry cheesecake months ago. It has sat in my shoe box gathering dust since the day I decided the Key Lime Pie recipe looked good and "I will keep this and make it for Gary, (Gary is my husband and he LOVES a good key lime pie.) They say its the thought that counts and that Key Lime certainly was a fleeting one at that!

So, below are the recipes for Pumpkin Mousse Pie and Five Minute Key Lime Pie! Today we will be doing the Pumpkin Mousse!

Would you look at that prep time (10 mins) another simple recipe my friends! YAY for simple! The ingredients are as follows:

1/2 cup cold fat-free milk
1 Tbls pumpkin spice
1 Cup canned Pumpkin
1 Package vanilla instant pudding and pie filling
1 tub 8oz Whip Cream
1 Keebler Ready Crust Graham pie crust

 Directions
 1.) In large bowl whisk together milk and spice. Add Pumpkin. Stir until combined. Add Pudding mix. Beat with whisk for 1 1/2 minutes. Stir in half of the cool whip. Spread in crust

Whisk Milk and Spice
Add 1 Cup pumpkin and Whisk 1 1/2 Minute
Add pudding
Add half the cool whip and stir


Spread in the crust
2.) Top with the remaining Cool Whip

Not very pretty but I am thinking it will be YUMMY!
3.) Garnish as desired and refrigerate for 3 hours.

I chose Hershey chocolate for my Garnish

Is this a thumbs up family friendly dessert, just ok, or a thumbs downer, "no way Jose!" We shall see when our three hours are up......
So, while we are waiting I just want to show you a few more goodies I found today while making this one simple dessert.

Two thumbs up from the kiddo's and one big fat NO from the BOSS! Quote: "Too much spice for me. I may eat it again if it didn't have as much pie spice." 

So, there ya have it folks, the family has spoken! Keebler Pumpkin Mousse Pie is a HIT with the kiddo's and not so big a HIT with daddy'O! 

I would also have to say it was a little too much spice for me. I would cut the pie spice in half and try it again

Minute Rice Mexican Chicken & Rice Dinner


Happy Wednesday! Oh my gosh, I am so excited to start this journey with all of you. I thought I would start off sharing this pic so you can understand the main reason I wanted to start this blog in the first place. I have tons and tons of recipe books, and over time I have collected recipes off of products that I use everyday.
The problem is, I have collected these recipes and have not tried most of them. I thought I could use this blog to help me get started and that this would be a good place to organize them and keep track of whether they are something that my family LOVED or LOATHED! I don't know about you, but I have so many recipes I have tried over the years but I can't keep track of which ones were keepers and which ones were NOT!

Today I am sharing a recipe that I cut off the back of a Minute Rice box. It sounded easy, and I LOVE, LOVE, LOVE that idea, and I had the ingredients on hand, which made it even more appealing.

Mexican Chicken & Rice Dinner

1 Tbsp Oil
4 Small Chicken Breasts
1 Medium each Green pepper and Red pepper
2 Cups Water
1 Cup, Thick and Chunky Salsa
2 Cups White Minute Rice, uncooked
1 10oz package frozen corn
1/2 Cup shredded cheddar cheese




As you can see this came with two recipes. We will save the Terriyaki Shrimp stir fry for another night. We will do the one I feel is more family friendly tonight. Here is a closer view of the Mexican Chicken and Rice

Will you look at that Prep time and Cook time? It really was a simple meal to make, if you look, there are only 3 easy steps and then you have dinner for the whole family. When I say whole family, I am thinking I had enough to feed about 7. The servings shown here say 4, but we had left overs and there are currently 4 of us at home.

For step one I browned my chicken and peppers in 1 Tbsp of oil. After you brown the chicken and peppers you remove them from the skillet to be added again in a few.

If you look at step 2, you then add your 2 cups of water and 1 cup of thick and chunky salsa to the skillet and bring to a boil.
Once this boils you add your Minute White Rice, 2 Cups uncooked, and 1 10 OZ bag frozen corn. You will then add your chicken mixture back in and sprinkle with cheese!
This will then simmer until your rice is tender, and VOLIA! There you have it, Minute Rice Mexican Chicken & Rice Dinner. 

The big question remains, DID TEDDY LIKE IT!

Teddy has decided that this dish wasn't too bad and that it is a Family Friendly choice!!

Hey Mikey, He Likes It!!!

Introducing Teddy the Family Friendly Food Critic!!



 I am so excited to start this blog. I have been
 meaning to get this going for some time now and life just seems to take over. I would like to start by introducing the inspiration behind this blog. My son, Teddy Michael Sanchez! He is my Picky eater, you know the one's, most of us have at least one of them in the pack. Well, Teddy is mine! I can spend hours in the kitchen only to hear the dreaded words spewed from his 11 year old mouth "ewww, that looks gross, I'm not eating!" I always think back to this commercial in the 80's, hopefully most of you know the one. I can't possibly be that old, can I?




 I decided that I had to come up with a way to get this boy eating and trying new things so I came up with a rating system and Teddy was the judge. In order to be the judge he had to be willing to try every dish that I made and rate it, thumbs up

for "I would eat that again" , thumbs in the middle for "it was ok and I might try it again" to thumbs down
"disgusting and I will never eat that again." Who's a better food critique than a picky child?

 The next thing I wanted to use this blog for was to post and try recipes that are on the products that we use everyday. I have a baggie that is full of these recipes and I have not tried a one, you all. They are just sitting, waiting to be tried and taking up room in my spice cupboard. I am so excited to share these recipes with you and to have Teddy try and rate them as family friendly, or family deadly dishes!! I am going to try and post at least one recipe each day so that I can start clearing out my cupboard. Make sure to check in and see what recipes may work for your family and picky eaters!
